Mycotoxins

Mycotoxin is the branch of Food Microbiology that deals with the study of toxins produced by fungi in food. The deleterious effects of these compounds on human and animal health are recognized, being able of inducing carcinogenic, hepatotoxic and mutagenic effects. It is now known that about 25% of all agricultural products produced in the world are contaminated with some mycotoxin.
